Attack of the Green Monster

It will change your life! The green monster is so good, that my wouldn't-touch-any-vegetable-with-a-10-foot-pole of a boyfriend likes them! No wait, he LOVES them! It is quite shocking actually.


It's lean, it's green, it's a perfect meal!






































Ingredients:
  • 1 c. Spinach, steamed
  • 1 c. Almond Milk
  • 1 Frozen Banana
  • 1 Tbsp Agave syrup or Honey
  • 1 tsp Flax Seed Oil
  • Anything else you want to add! (I suggest peanut butter, or strawberries, or even cocoa powder!)
Directions: Blend Away! Add ice cubes to achieve the preferred consistency.

The perfect quick weeknight dinner!

Well today was just lovely.
It was my day off from the gym (I have 6 days on, one day off a week).
I got to spend alllll evening with Max (my boyfriend/roomate), which was wonderful as I have been so busy lately I barely get to see him even though we live together!

As it is near the end of the week, and I am going away from the weekend, I decided to skip the groceries and throw something together from whatever I had leftover. The result? a GENIUS pizza!

What's even better? It is completely healthy. This  is good news as I had a work lunch at Moxies today. I ordered the mango chicken breast with roasted vegetables, which seemed healthy, but you never know how they cook that stuff! Could have been drenched in loads of butter for all I know :S

Just look at this masterpiece:

Roasted Eggplant and Spinach Flatbread Pizza


Ingredients:

  • 4 slices Eggplant
  • 1 small shallot, diced
  • 1 bunch Spinach, chopped
  • 1 Tsp Olive Oil
  • 5 or 6 Cherry Tomatoes, halved
  • 2 Tbsp tomato sauce (I used my homemade roasted garlic and basil sauce)
  • 1 Small amount of Crumbled Goat Cheese
  • 1 whole wheat Pita Bread or Flatbread (I used a high protein/low fat whole wheat pita)
Directions:

Preheat oven to 450 Degrees.
In a medium-high skillet, fry the eggplant slices and shallot in olive oil until slightly browned.
Spread the tomato sauce on the flatbread, folllowed by the eggplant, shallots, and tomatoes. Top with the spinach and the goat cheese. Put in the oven for about 5 or 6 minutes, let cool, and enjoy!

Hello!

Today I woke up totally rejuvenated and I loved it! Maybe it was because I had a batch of Vegan Overnight Oats waiting for me in the fridge. Mmmm… .yes…. that must be it. I got this recipe from Angela’s blog over at www.ohsheglows.com. If you haven’t checked it out yet, I urge you to do so. Not only are her recipes AMAZING, she has a wonderful story and sells the yummiest goodies!



Anyways, take a look at this puppy:



Oh… My… Goodness. If you can believe it, this even tastes better than it looks. PURE HEAVEN!
Here is the recipe adapted from Angela’s Blog:

Angela’s Overnight Oats with Banana Soft Serve

◦1/3 cup oats

◦1.25 cup Almond milk

◦1-1.5 tsp Pure Vanilla Extract

◦1-1.5 tsp Cocoa Powder

◦1 Tbsp Pure Maple Syrup (A good quality one makes a huge difference)

Directions: In a bowl, add the oats, cocoa powder, maple syrup, vanilla, and Almond Milk and whisk until the clumps are gone. Place in fridge overnight or for 1-2 hours. In the morning, remove from fridge and layer with Banana Soft Serve and blueberries.
